Here’s my easy peasy Apple Pie recipe!
This recipe is for a 9inch pie shell…
1362g of peeled and chopped organic apples (8 – 12, depending on size)
1-1& 1/2cups of packed organic brown sugar
2-3tbsp of pure organic Vanilla extract
1/2 organic lemon juice and rind
1tbsp of organic cinnamon
4-6 tbsp of organic butter
1/4 of organic flour
1/4 of apple juice or water
Mix all together and let sit while you roll out the pastry for the top of pie or make your crumble topping.
I find it really important for the filling to stew for at least 15 minute before you add to your pie shell.
It lets the flavour soak in before you shock it with cooking.
Also, taste test your filling to see if it needs more sweetening or spices.
Remember this is a basic recipe so you can add different spices or maple syrup instead of sugar, etc.
